Varietal Composition:

Location:
"Strofi", 0,6ha, sub-region. Amyndeon plateau.

Vineyard:
97ha of Linear, privately owned vineyard situated
at an altitude of 620-710 m.

Harvest:
Manual harvesting in 15 kg capacity picking baskets. November 12th

Density of Plantation:
3.700 shoots / ha.

Yield:
18 HL/ha, post to green harvest & selection.

Vinification:
Destemming, no crushing, picking up just the free flow juice. Cold soak, skin contact. Alcoholic fermentation under controlled conditions in rotating fermentors at gradual increasing temperatures. Fermentation is finished in new oak. Maintenance of wine "sur lie" for twenty four months with regular stirring.

Ageing:
10 years ageing in new Jupille oak barriques light toast. No treatment or filtration before bottling
